I made a short trip to Toby's Estate today during the lunch break from the Heart Scan. Yes, a heart scan. i have been getting chest pains and sudden blackout few months back. Today was just another follow-up appointment. The Doctor gave me an injection which really stress the heart. My chest(heart) literally felt very tight.
At toby's, sampled a Ethiopian unwashed beans via Chemex. i have reliased that most unwashed coffees have that similar Jackfruit aroma. Why? It's because of the fermentation process! Fermentation is a process where, the skin,parchment, mucilage is left to dry and ferment to obtain the seed of a coffee cherry (raw coffee bean). Farmers that can't afford irrigation channels for water and technologies, uses this natural dry method to process the coffees.
There are two type of fermentation process, one where the coffee cherry is dried as a whole (full-natural process) and the other where the skin is removed leaving behind the mucilage intact and left to ferment (honey-dry process).
